Sustainability

“Sustainability is a dynamic concept”. Yes perhaps, but should it really lead us to conform on every level? Should looking at one’s life through the lens of sustainability mean setting oneself limits?

To some extent, but above all I believe one can try to overturn one’s personal existential and social objectives. Alexander Langer proposed changing the famous Olympic motto Citius, Altius, Fortius (faster, higher, stronger) to Lentius, Profundius, Suavius (slower, deeper, gentler). And he added that ecological conversion will only take place if it is socially desirable.

As a chef I feel I can play my part in making a substantially different concept of wellbeing desirable.

Food Education

It’s a core subject that overlaps all the traditional subjects in school (language, maths, chemistry, physics, history, geography, etc.) and it should become a compulsory part of the curriculum. When you understand what you eat and where it comes from, you also gain a better understanding of yourself - and of the world more generally. The tongue I use to speak and to taste, and that guides me in the creation of my dishes, is that of my homeland.

I don’t waste

Food made from leftovers and from items languishing at the back of the larder are my passion.
